Two Ions and a Bag of Malt Later
All-Grain Beer BrewingSo you asked what I’ve been up to and I made the mistake of checking the clock, which says something I’m not going to repeat, and there’s a five-litre pot of cooling wort on the stove wrapped in every towel we own like a patient. Sit down. This is going to take a minute because I have to start with the water, and I have to start with the water because that’s where I started, which is the whole embarrassing point.
You remember the flytrap I killed almost — the one where the entire hobby collapsed into keeping tap water away from the roots? There’s a TDS meter that lives by the espresso machine. Six parts per million, near-zero, so the boiler never scales. I have been reading that little meter out of habit for a year.
And then I’m on a brewing forum at some indecent hour, not even meaning to be, and two people are having an actual argument about the sulphate-to-chloride ratio of their water. Not the malt. Not the hops. The water. One of them is reconstructing, from distilled and a bag of mineral salts, the water of a specific English town — Burton-on-Trent — because its wells run heavy with gypsum and that gypsum is why Burton pale ales went sharp and hoppy in the 1800s. They figured out the chemistry in 1878 and now adding calcium sulphate to your brewing liquor is literally, in the books, called Burtonising it.
You’re probably thinking: it’s water, mate, it’s wet, move on. That’s what I would’ve said last month. But here’s the lever. Push the sulphate up, roughly two-to-one over chloride, and the beer goes crisp and dry and the bitterness gets a hard edge. Push the chloride up instead and the malt goes round and soft and full in the mouth. Same grain. Same hops. You are dialling the beer’s whole personality with two ions, from a spreadsheet, before a single grain is wet. I had a jug of blank canvas already sitting by the sink for the plants. I did not stand a chance.
Okay, but the water was just the trapdoor. Once you fall in, the thing that got me — genuinely, at the stove tonight, thermometer in hand — is that the mash is a dial, and the dial is enzymes. Two of them. Beta-amylase works best down around 63 °C and it nibbles the starch chains from the ends into little fermentable sugars. Alpha-amylase likes it warmer, 68 to 72, and it hacks the chains at random and leaves big unfermentable ones behind. So if I hold my mash cool, the yeast eats nearly everything and I get a thin, dry, boozier beer. Hold it a few degrees warmer and I leave sweetness and body on purpose. One temperature. That’s it. That’s the knob.
And I love that, you know what I mean? It’s a control surface. It reminds me of standing over the kombucha and realising chloramine — not chlorine, chloramine, the stuff that doesn’t boil off — was quietly sabotaging the culture while the yeast kept happily working. Same lesson wearing a different apron: the invisible chemistry is doing most of the deciding.
Here’s the bit that actually stopped me tonight, though. There’s an old saying — brewers make wort, yeast makes beer. You do the whole five-hour ceremony, the milling and the mashing and the hour-long boil where the hops slowly isomerise their acids into something bitter, and then you hand the entire thing over to a microbe and your one job becomes: keep it at the right temperature and don’t let anything dirty touch it. Let ale yeast run too warm and it throws banana and hot solvent notes. Not a flourish. A fault.
For roughly 350 years, brewers did all of this without knowing yeast existed. The 1516 German purity law lists water, barley, and hops — and no yeast, because nobody had found it yet. They’d reuse a lucky stir-stick, a Zauberstab, a magic wand, not knowing it was caked in the living thing doing the actual work.
Which is the flytrap all over again, isn’t it. And the SCOBY. You steward a process whose main character you can’t quite see and mostly can’t control, and you tell yourself the measurements are keeping you honest.
The maddening part — and I’ll be honest because it’s this hour and honesty is cheap — is that I don’t find out if any of this worked for two to four weeks. The hydrometer says the gravity’s where it should be. But that’s a reading about sugar, not a verdict about beer. I did the whole thing tonight and the only thing I actually know is the number. Ask me in a month. The wort’s still too warm to pitch, and I am too wired to sleep, and neither of those problems is going anywhere for a while.
